Why do knitters love making cowls and infinity scarves?
Because they are fun, mostly knitted in the round in one continuous loop, and relaxing to knit. Sometimes they are knitted in simple garter or stockinette stitch or using an interesting stitch pattern. They are a great way to try a luxury fiber or hand dyed yarn becuase often times they only requires one or two skeins of yarn.

What's the difference between cowls and infinity scarves?
Both are cowls and infinity scarves are a continuous loop. They may be knitted in the round or back and forth and then joined at the ends. An infinity scarf tends to be longer and may be worn doubled or tripled around the neck. An infinity scarf sometimes has an extra twist in it like a moebius.
